Mapo Tofu

Ingredients

  • Vegetable Oil 1/4 cup & 1/4 cup
  • Dried Red Chili 10 pieces
  • Thai Chili 2 pieces
  • Ginger 3 tbsp
  • Garlic 4 tbsp
  • Ground Pork 1 1/2 pounds
  • Sichuan Peppercorn 1/2 tsp
  • Spicy Bean Sauce 2 tbsp
  • Chicken Stock 1 cup
  • Cornstarch 1 1/2 tsp
  • Water 1 1/2 tsp
  • Silken Tofu 1 pound
  • Sesame Oil 1/4 tsp
  • Sugar 1/4 tsp
  • Green Onion 1 piece

Directions

  1. Begin by heating the vegetable oil in a large skillet, then add in the dried red chilis and the Thai chilis. Toast the chilis then set aside.
  2. Next add more oil to the pan along with ginger, garlic, and ground pork. Make sure to break up the ground pork as it cooks.
  3. When the pork has browned add in Sichuan peppercorns, spicy bean sauce, and chicken stock then bring to a simmer.
  4. Add the cornstarch slurry and the toasted chilis to the mixture and stir until thickened.
  5. Add in the silken tofu, sesame oil, sugar, and green onions then stir to coat everything in the sauce.
  6. Serve over rice with extra green onions for garnish.
