Udon Noodle Soup
Udon noodle soup is a comforting Japanese dish featuring thick, chewy noodles served in a light, savory dashi-based broth and topped with simple garnishes.

Ingredients
- Water 2 cups
- Udon noodles 1 pack
- Soy sauce 2 tbsp
- Sugar 1/4 tsp
- Mirin 1 tbsp
- Dashi powder 1/2 tbsp
- Tsuyu 1 Tbsp
- Green onion 1 stalk
- Furikake 1/8 tsp
- Tofu skins (or bean curd) 1-2 sheets
Directions
- In a medium pan add water, instant dashi powder, soy sauce, sugar, mirin, and tsuyu. Then bring to a simmer over medium heat for about 2-3 minutes.
- Once the broth has begun simmering add the udon noodles directly into the hot broth. Use a spoon to gently loosen the noodles and cook for 1-3 minutes until the noodles have softened.
- Transfer to a large bowl, then garnish with green onion, furikake seaweed seasoning, fried bean curd, and narutomaki (fishcake). Serve and enjoy!
