Ingredients
- 8 oz rice noodles
- 1 lb shrimp or chicken
- 2 eggs
- 3 tbsp fish sauce
- 1 tbsp tamarind paste
- 1 tbsp sugar
- 1 cup bean sprouts
- 2 green onions
- 2 tbsp oil
- Crushed peanuts, lime wedges
Directions
- Soak noodles in warm water 20 minutes; drain.
- Heat oil in wok; cook shrimp or chicken until done.
- Push aside, scramble eggs.
- Add noodles, fish sauce, tamarind, and sugar. Toss for 2–3 minutes.
- Stir in sprouts and green onions.
- Top with peanuts and lime.
