Pad Thai

Pad Thai is a classic Thai stir-fried noodle dish featuring rice noodles tossed with protein, eggs, and vegetables in a tangy, savory-sweet sauce, finished with peanuts and lime.

Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp or chicken
  • 2 eggs
  • 3 tbsp fish sauce
  • 1 tbsp tamarind paste
  • 1 tbsp sugar
  • 1 cup bean sprouts
  • 2 green onions
  • 2 tbsp oil
  • Crushed peanuts, lime wedges

Directions

  1. Soak noodles in warm water 20 minutes; drain.
  2. Heat oil in wok; cook shrimp or chicken until done.
  3. Push aside, scramble eggs.
  4. Add noodles, fish sauce, tamarind, and sugar. Toss for 2–3 minutes.
  5. Stir in sprouts and green onions.
  6. Top with peanuts and lime.
