Drunken noodles, or Pad Kee Mao, is a bold Thai stir-fried noodle dish featuring wide rice noodles tossed with protein, vegetables, and aromatic basil in a savory, slightly spicy sauce.

Ingredients
- 12 oz wide rice noodles
- 1 cup chicken or shrimp
- 1 cup bell peppers (sliced)
- 1/2 onion (sliced)
- 2 cloves garlic (minced)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1–2 Thai chilies (sliced)
- 1 cup Thai basil
- 2 tbsp oil
Directions
- Soak or cook noodles according to package directions, then drain.
- Heat oil in a wok over high heat.
- Add garlic and chilies and cook for 30 seconds.
- Add protein and stir-fry until cooked through.
- Add onion and peppers and cook for 2–3 minutes.
- Add noodles, soy sauce, oyster sauce, and sugar.
- Toss well, then stir in basil.
- Cook 1 more minute and serve immediately.
