Beef Rendang

Ingredients

  • 1 lb beef (cubed)
  • 1 cup coconut milk
  • 2 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 1 onion (chopped)
  • 2 tbsp rendang curry paste
  • 2 tbsp oil
  • 1 tsp sugar
  • Salt to taste

Directions

  1. Heat oil in a pot and sauté onion, garlic, and ginger for 2–3 minutes.
  2. Add curry paste and cook for 1–2 minutes until fragrant.
  3. Add beef and stir to coat with spices.
  4. Pour in coconut milk and bring to a boil.
  5. Reduce heat and simmer uncovered for 1–1.5 hours until beef is tender and sauce thickens.
  6. Stir occasionally and season with sugar and salt.
  7. Serve with steamed rice.
