Ingredients

  • 8 oz sweet potato glass noodles
  • 1/2 lb beef (thinly sliced)
  • 1 carrot (julienned)
  • 1 cup spinach
  • 1/2 onion (sliced)
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 2 tbsp oil

Directions

  1. Cook noodles according to package directions and drain.
  2. Stir-fry beef in 1 tbsp oil until cooked, then remove.
  3. Sauté vegetables separately until tender.
  4. Combine noodles, beef, and vegetables.
  5. Add soy sauce, sugar, and sesame oil, then toss well.
  6. Serve warm or at room temperature.
