Ingredients
- 1 lb beef (cubed)
- 1 cup coconut milk
- 2 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 1 onion (chopped)
- 2 tbsp rendang curry paste
- 2 tbsp oil
- 1 tsp sugar
- Salt to taste
Directions
- Heat oil in a pot and sauté onion, garlic, and ginger for 2–3 minutes.
- Add curry paste and cook for 1–2 minutes until fragrant.
- Add beef and stir to coat with spices.
- Pour in coconut milk and bring to a boil.
- Reduce heat and simmer uncovered for 1–1.5 hours until beef is tender and sauce thickens.
- Stir occasionally and season with sugar and salt.
- Serve with steamed rice.
