Bo Kho

Ingredients

  • Three Crabs Fish Sauce 2 Tbsp
  • Brown Sugar 1 Tbsp
  • Ginger 4 Tbsp
  • Five Spice Powder 2 Tbsp
  • Pepper 1/2 tsp
  • Beef Chuck 3 lbs
  • Red Onion 1
  • Garlic 2 Cloves
  • Lemongrass 3 Tbsp
  • Tomato 1
  • Salt 1 tsp
  • Tumeric Powder 1/2 Tsp
  • Water 4 cups
  • Cinnamon Stick 1
  • Red Thai Chilies Few
  • Carrots 1.5 lbs

Directions

  1. In a bowl, mix fish sauce, brown sugar, ginger, Chinese 5 spice, and black pepper.
  2. In a large bowl, place beef chuck in desired size and mix in the seasoning mix from step 1. Cover the bowl and let it marinate for minimum 30 minutes.
  3. In a pan, add some vegetable oil, and cook the beef chuck in batches until all sides are seared, then set the beef aside.
  4. In the same pan, add in garlic, lemongrass, tomato, salt, turmeric powder, water, cinnamon stick, and red Thai chilies. Place the beef back in the pot. Bring to boil, turn down to medium low heat, cover the pot and simmer for 1 hour.
  5. Add in carrots and simmer for 15 minutes.
  6. Before serving, remove the cinnamon stick from the pot. Serve alone or with baguette or rice.
