Ingredients

  • 2 boneless chicken breasts
  • Salt & pepper
  • 1/2 cup flour
  • 2 eggs (beaten)
  • 1 cup panko breadcrumbs
  • Oil for frying

Directions

  1. Pound chicken to even thickness and season with salt and pepper.
  2. Dredge in flour, dip in egg, then coat with panko.
  3. Heat oil in a pan over medium heat.
  4. Fry chicken for 4–5 minutes per side until golden and cooked through.
  5. Drain on paper towels.
  6. Slice and serve with rice and katsu sauce.
