Drunken Noodles

Drunken noodles, or Pad Kee Mao, is a bold Thai stir-fried noodle dish featuring wide rice noodles tossed with protein, vegetables, and aromatic basil in a savory, slightly spicy sauce.

Ingredients

  • 12 oz wide rice noodles
  • 1 cup chicken or shrimp
  • 1 cup bell peppers (sliced)
  • 1/2 onion (sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1–2 Thai chilies (sliced)
  • 1 cup Thai basil
  • 2 tbsp oil

Directions

  1. Soak or cook noodles according to package directions, then drain.
  2. Heat oil in a wok over high heat.
  3. Add garlic and chilies and cook for 30 seconds.
  4. Add protein and stir-fry until cooked through.
  5. Add onion and peppers and cook for 2–3 minutes.
  6. Add noodles, soy sauce, oyster sauce, and sugar.
  7. Toss well, then stir in basil.
  8. Cook 1 more minute and serve immediately.
