Mapo Tofu
Mapo tofu is a classic Sichuan dish featuring silky tofu and ground pork simmered in a bold, spicy sauce with chili peppers and numbing Sichuan peppercorns.

Ingredients
- Vegetable Oil 1/4 cup & 1/4 cup
- Dried Red Chili 10 pieces
- Thai Chili 2 pieces
- Ginger 3 tbsp
- Garlic 4 tbsp
- Ground Pork 1 1/2 pounds
- Sichuan Peppercorn 1/2 tsp
- Spicy Bean Sauce 2 tbsp
- Chicken Stock 1 cup
- Cornstarch 1 1/2 tsp
- Water 1 1/2 tsp
- Silken Tofu 1 pound
- Sesame Oil 1/4 tsp
- Sugar 1/4 tsp
- Green Onion 1 piece
Directions
- Begin by heating the vegetable oil in a large skillet, then add in the dried red chilis and the Thai chilis. Toast the chilis then set aside.
- Next add more oil to the pan along with ginger, garlic, and ground pork. Make sure to break up the ground pork as it cooks.
- When the pork has browned add in Sichuan peppercorns, spicy bean sauce, and chicken stock then bring to a simmer.
- Add the cornstarch slurry and the toasted chilis to the mixture and stir until thickened.
- Add in the silken tofu, sesame oil, sugar, and green onions then stir to coat everything in the sauce.
- Serve over rice with extra green onions for garnish.
