Oyakodon

Ingredients

  • Chicken Thighs 12 ounces
  • Sake 1 tbsp
  • Eggs 4
  • Dashi Stock 1/2 cup
  • Soy Sauce 2 tbsp
  • Mirin 2 tbsp
  • Sugar 2 tsp
  • Onion 1/2
  • Green Onion 2 stalks
  • Parsley 1 tsp
  • Shichimi Togarashi 1/2 tsp
  • Sansho Pepper Powder 1/2 tsp

Directions

  1. Marinate chicken thigh pieces in sake for 5 minutes.
  2. In a separate bowl crack 4 eggs and mix, then set aside.
  3. Mix dashi stock, soy sauce, mirin, and sugar in a small bowl.
  4. Add sliced onions and dashi mixture to a large skillet, then bring it to a boil.
  5. When the mixture has begun to boil add in the sake marinated chicken thighs.
  6. Pour over the beaten eggs and cover with a lid until the eggs have set.
  7. Top with chopped green onions and plate over rice.
  8. Garnish with chopped parsley, shichimi togarashi, and sansho pepper powder.
