Ingredients

  • Assorted vegetables (sweet potato, bell pepper, zucchini)
  • 8–10 shrimp (peeled, deveined)
  • 1 cup all-purpose flour
  • 1 egg
  • 1 cup ice-cold water
  • Oil for deep frying
  • Tempura dipping sauce

Directions

  1. Mix egg and ice-cold water; stir in flour lightly so the batter remains slightly lumpy.
  2. Heat oil to 350°F (175°C).
  3. Dip vegetables and shrimp in batter and fry until golden, about 2–3 minutes.
  4. Drain on paper towels and serve with dipping sauce.
